Since the first sale of their Chefs Knife on back on 9th October 2015 this new high end knife manufacturer has rapidly expanded their product offering to include not only the 8 Inch Chef Knife, but also an 8 Inch Bread Knife; 7 Inch Santoku Knife; 6 Inch Boning Knife; 6 Inch Utility Knife; 5.5 Inch Serrated Utility Knife and a 4 Inch Paring Knife.

The design of the Zelite Infinity knives were primarily driven by the market wanting a solution to overcome the trade off between sharpness-edge retention vs. stain-rust resistance. Traditionally if you choose sharpness and edge retention as your main feature for choosing your chefs knives you would end up with a high carbon steel. This however, is prone to rusting due to its metallurgical structure. On the other hand, if stain and rust resistance was more important to you then typically stainless steel would be chosen. However, the blade would then be limited in the sharpness attainable and its ability to keep an edge. This is where Zelite Infinity introduced their line of knives that use Japanese VG10 super steel as the cutting core which is then protected by 33 layers per side of SUS410 high carbon stainless steel. What this means is you end up with a blade that can be sharpened to extreme levels; have superb edge retention; yet also benefit from stain and rust resistance due to the outer protective layers of stainless steel.
